Much more hands on (i.e., being able to touch starfish, mata rays, shell fish, etc.) as part of normal exhibits, not just at special times. And I think it's just the timeframe in which both were built. The Shedd definitely (now) has the retro-30's feel, but that also means smaller displays, whereas Georgia, built in the 2000's, has glass the size of some theater screens - so it's much more impressive to walk through their exhibit spaces.
